Homemade “Cream Cheese” or cheese spread

This is really simple to make. I just put a quart of plain organic whole milk yogurt in a strainer lined with cheese cloth and let it sit over night. All the juice runs out through the cheese cloth and you have a cream cheese spread that you can add flavors to or use it like it is. It’s great on crackers or anything you might use sour cream/cream cheese for, and better for you!
Best if you use some kind of raw goat or cow’s milk yogurt, then you can save the whey that comes off the yogurt and use it in your smoothies, the whey is full of live enzymes that are great for you! But if the yogurt is pasteurized the live enzymes have been killed during the pasteurization, while it’s still good for you, it’s not nearly as good :) Just a little tidbit of info I learned the other day at a neat nutrition class I attended a couple weeks ago, we learned how to make cheese. I’ll post about it as soon as I get around to making some!




Jen, that “cheesecloth” looks familiar. Is it THE famous cheesecloth?
